Olive Oil Cake

In a mixer’s bowl add the extra virgin olive oil, sugar, orange juice, water, baking soda and lemon zest and beat for 4 minutes.

Then add the flour that you have already mixed with the cinnamon, the raisins and the walnuts and beat until homogenized.

Transfer to a baking pan No.32 already spread with olive oil and bake to a preheated oven at 180°C for 45 minutes or more depending on the oven.

Serve with caster sugar.


500 gr self-raising flour
1 teaspoon cinnamon
240 ml extra virgin olive oil
230 gr sugar
12 tablespoons orange juice
120 ml water
½ teaspoon baking soda
Zest of 1-2 lemons
75 gr blonde raisins
75 gr black raisins
75 gr walnuts
Caster sugar
