Cut the onions and peppers in rings.
Line a baking pan with paper parchment and place the fillets over a layer of onions and peppers.
Drizzle with olive oil, salt and pepper.
Add the wine and roll the paper parchment over the fillets, closing it as tightly as you can.
Bake for 25-30 minutes in a preheated oven at 180-200°C.
